Chole Bhature Recipe – A Delicious Treat with Mitusha Blog

If you are a fan of North Indian cuisine, Chole Bhature is a must-try dish! This classic combination of spicy chickpeas (chole) and deep-fried bread (bhature) is a favorite across households. Ingredients

For Chole:

  • 1 cup chickpeas (soaked overnight)
  • 2 tbsp oil
  • 1 large onion (finely chopped)
  • 2 tomatoes (pureed)
  • 2-3 garlic cloves (minced)
  • 1-inch ginger (grated)
  • 2 green chilies (slit)
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tbsp chole masala
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves (for garnish)

For Bhature:

  • 2 cups all-purpose flour (maida)
  • 2 tbsp semolina (sooji) – optional for crispiness
  • 1/2 cup yogurt
  • 1/2 tsp baking soda
  • 1 tsp sugar
  • Salt to taste
  • Water (as needed)
  • Oil (for deep frying)

Instructions

Preparing the Chole:

  1. Pressure cook the soaked chickpeas with 3 cups of water and a pinch of salt for 5-6 whistles or until tender. Set aside.
  2. Heat oil in a pan, add cumin seeds, bay leaf, and let them splutter.
  3. Add chopped onions and sauté until golden brown. Then, add ginger, garlic, and green chilies. Cook for 2 minutes.
  4. Stir in the tomato puree, turmeric powder, red chili powder, and chole masala. Cook until oil separates.
  5. Add the boiled chickpeas along with the water. Simmer for 10-15 minutes until the gravy thickens.
  6. Finish with garam masala and garnish with fresh coriander leaves.

Preparing the Bhature:

  1. In a large bowl, mix all-purpose flour, semolina, baking soda, sugar, and salt.
  2. Add yogurt and knead the dough using water as needed. It should be soft and pliable.
  3. Cover the dough with a damp cloth and let it rest for 2-3 hours.
  4. Heat oil in a deep frying pan.
  5. Divide the dough into equal portions and roll each into a round disc.
  6. Fry each bhatura in hot oil until puffed and golden brown.
  7. Drain on a paper towel to remove excess oil.

Serving Suggestions
